What to cook a vegetarian for Christmas

This year, 6 out of the 11 people having Christmas dinner in my Mam and Dad’s house will be vegetarian. We’re just about tipping the balance in our favour so we always try to make a special main course to sit alongside the turkey and ham. It can be tricky to find something that fits the bill. It has to be cheese free (to satisfy the fussy eaters). It has to go well with accompaniments like roast potatoes, brussel sprouts and gravy. It has to be relatively simple and quick to make and preferably something that can be prepared in advance. Not too much to ask!
