Seven Days of Cookies: Day Six

Cacao Cherry Cookies

2 1/4 c glutenfree flour
1 teaspoon baking soda
½ teaspoon sea salt
1 c vegan butter
1 cup Muscavado sugar
½ cup organic cane sugar
2 tbl cornstarch + 2 tbl hot espresso
2 tbl Black Cherry juice
1 c dried cherries, diced small
1/2 c cashews, chopped
2/3 c pecans, chopped
2 c dark chocolate chips

Mix until fluffy, butter and sugars; add juice, starch and espresso, set aside; Sift dry ingredients together, combine with butter sugar mixture until combined; add nuts, cherries and chocolate chips, fold until combined.

Bake on 350 7 minutes, remove, let cool, repeat.
