Skinny Chicken Fried Rice

Happy Holidays! I’ve been neglecting this for TOO long. Life definitely has been challenging and crazy the last few months but am finally able to post today with another healthy recipe for those to try! I’ve been experimenting in the kitchen almost everyday and thought I’d share a favorite!

Ingredients:

2 c. cooked brown rice

1 tbsp. coconut oil

1 c. minced onion

1 c. chopped bell peppers (I used half green and half yellow)

1 lb. boneless & skinless chicken breasts (tenderized & cut into bite sized pieces)

1/2 c. low sodium soy sauce

2 tbsp. lime juice

Splash of pinneapple juice

1 teaspoon tumeric

1 tbsp. onion powder

2 eggs (or egg whites!)

Basil, garlic, cayenne pepper, garlicsalt & pepper to taste
