1- 3 pound boneless beef chuck roast
1- 12oz can frozen apple juice concentrate thawed
1- Dash of soy sauce
3- cloves of garlic, chopped
1- 1 oz envelope dry onion soup mix
3- baking potatoes, peeled and diced
2- carrots, peeled and diced
Optional 2- apples
Directions- Preheat oven to 325 degrees. Fill roasting pan with ½ inch of water then stir in apple juice concentrate. Make several slits in roast and stuff with garlic. Put roast in pan. Sprinkle soy sauce over top of roast. Spread onion soup mix over roast. Cover with aluminum foil and lid. Bake for two hours. Add carrots, potatoes, and apples. Recover and cook an additional two hours or until tender.
